Florence et François Bachelier Chablis 2023 BLANC DE NOIRS fleshy texture underpinned by ratherOld style Chablis from the North. Florence and her husband Franois are 8th generation farmers with eighten hectares in Villy. Most of their vines are betwen 60 80 year old including a tiny slice of the Chablis Premier Cru Les Fourneaux, the only Premier Cru to face due South. Their old vine and Premier Cru are aged in mostly old barrels, while their textbook AOC Chablis, is aged exclusively in tanks for 5 to 9 months, before being filtered and bottled
